Two Delicious Chocolate Chip Cookies that Anyone will Love

Here is the recipe for the cookies that I made this weekend. I substituted Date sugar for honey granules and it turned out fabulous! I also used unsweetened chocolate instead.

A Taste of Wonderland

I thought about entitling this post “A Tale of Two Cookies,” but thought that perhaps others had over-played that title already. So instead of going for clever, I went with a more straightforward approach.

Yesterday, I worked. I cleaned the house from top to bottom, washed clothes, and worked on numerous school projects. After all that, my stomach was growling, demanding that I feed it after such a strenuous morning! The first thing I thought of was cookies. Perhaps not the healthiest thing to put in an empty stomach, but a craving is a craving, and my mind was made up. With cookies on the brain, I set about finding a recipe that would be delicious, as well as gluten free.

A Great Weekend

Well, this weekend was a very busy one! First of all, I got hungry for cookies, so I searched long and hard for a recipe that I thought would fall in or very close to my allowable foods list. I found a recipe for nut butter cookies using peanut butter, honey granules, vanilla extract, and egg. I took this recipe and made a few alterations. Instead of peanut butter, I mostly used almond butter. I did,however, leave in some peanut butter because it’s just so damned good. Then, I don’t support using honey granules (which isn’t really like honey at all), so I used date sugar! It’s dehydrated dates ground up– usually it’s gluten free and better for you than any kind of processed sugar. I also added some unsweetened chocolate chip pieces because I love chocolate. The end result is pictured below. They were amazing!! I will most definitely make them again!!! I couldn’t believe how delicious they were. I love how they’re natural and gluten free. You can eat 3 or 4 and not feel guilty, or sick.

So after my baking success, I went to my best friend’s wedding. Here’s a picture of me in my dress.


I didn’t eat most of the food at the wedding. I avoided the cookies, h’orduerves, pasta appetizer, and chocolate. I ate a very delicious salad, some steak, and half a glass of champagne. I will admit that I had 3 bites of wedding cake. I figured I had earned that. It. Was. Amazing. Yes, I have never tasted something so delicious!

I was able to work out on Friday morning with some circuit training. I won’t have a chance to work out again until Wednesday, but I’m back on my great diet so I’m ok with that. Everything is still in the works and if I have time to work out more, than I will. But I’m not going to beat myself up over it. As it is, I barely allow myself to eat anything, so I’m picking my battles!

One month results…

Today feels super! It’s been about a month since I’ve had to go back on my no/super low carb diet, and I’ve felt well enough to exercise at least twice per week. It’s not as much exercise as I would like, but with the unpredictability of my illness, it’s the best I can do. This is a lifestyle challenge, not a die-hard fitness challenge.

It has been a wonderful month, and I have to go to my best friend’s wedding tomorrow. I’m really excited and I think that I look great!! This morning I woke up early and did a circuit workout in my own apartment using hand weights and reps. I love being resourceful. So, below is a picture of me from over a month ago, and a picture of me now put side to side. I’m wearing the same clothes for the best comparison LOL! I can see a difference, can you?? I’m hoping to see more changes in another month. it’s awesome to know I can change! What is your experience with your own personal fitness goals?

I think this website is FANTASTIC!!  It describes all of the sugar substitutes that are good for you.  My personal favorites are raw honey and green stevia!  I hope you find this as helpful as I do, considering I am trying to bake without grains or processed sugars. 

Look, I’m here!

Look! Proof that I went kickboxing tonight! So glad that I did! It was difficult but I know I have to try, no matter how sick I can be. If anyone is wondering what diet I follow now, it’s called the Maker’s diet. It’s very similar to Body Ecology, except I can eat berries, but I can’t eat quinoa and millet (at least not for a while). I’ve been following it for about 3 weeks, and it’s going really well! I want to stress that I didn’t start this diet to lose weight, I started it to recover from my disease. It’s actually helping and I’m grateful. If anyone has followed it, let me know your thoughts! Xoxo


We made Kale Chips!

My roommate and I were starving so we made kale chips and avocado for dinner! Kale chips are easy to make. Just put kale on a baking sheet with some olive oil or coconut oil, salt and pepper, and bake for 15 mins at 400. These are super delicious and you don’t even feel guilty! I’ve been doing incredibly well on my diet and I’m planning on being fabulous for the rest of my life! I’m so glad I’m healthy. It feels great! Pictures are coming the end of next week!


Workout when we can!

So it had been an interesting week thus far. I was feeling pretty good Monday and Tuesday, but today I feel horrible. I guess the good food was helping, and now it’s not. Either way, I felt good enough yesterday to kick box! It felt wonderful, except for the fact that I woke up this morning with horrible neck pain. Below is a picture of one of the instructors that I like doin his thang! He does cool kicks. He’s a martial arts master actually. I burned a zillion calories at class. I seriously killed it. I still haven’t had any food other than berries, veggies, meats, and almonds, and I’m getting so hungry. But I can do this as long as this hotel stops putting the cheesecake in front of my face. I mean really… ?


Free, Healthy, and fabulous!

I’m the luckiest girl in the world today. I’m working at a hotel for work today and we have a delicious lunch, full of things that I can eat! And the best part is that it’s free! The bad part is that they put the desserts right in front of my face. Ughhhhh. It’s ok– I can control myself. Right?… I’m full from quality food! I probably won’t eat again today if I can help it. Maybe a small workout later if I have the energy. I’m also starting week 2 of a new drug therapy. I’m praying that it helps and I can get back to kickboxing…


Big salads are ok

It’s big salad night. I’m tired of making stuff so I got a big salad at a decent place near me. This morning was big omelette morning :). I missed getting a picture of that, but it was pretty! Yesterday I had enough energy to get up and go for a short run, and do some core exercises. Good for me! Then I went to work which was exhausting being on my feet for so long. But here we are again, Sunday night, and I’m getting ready for a grueling week… Keep your head in the game!



Healthy dinner time! All organic veggies: broccoli, spinach, onion and cilantro with side of organic turkey bacon. It’s not in the picture but I also had some goat cheese. Goat’s milk doesn’t suppress your immune system like pasteurized cow’s milk does, so I added a little for some extra flavor. Overall it was delicious and healthy.
